The tasks in oop1-2 can be achieved with very few alterations to the provided code. Are these few changes that mirror the methodology of the rest of the code sufficient to achieve full marks? Or should we go a bit further to improve the code (ex: by not working with object attributes directly rather via get/set methods)?

The purpose is to recognise the pattern (which is different to the pattern in the handbook), so in a sense you receive marks for recognising that. That said, if you want to improve further you are welcome. For me it is not about the mark, it is about pointing out patterns (which I believe leads to better understanding), so do not work to get full marks, work to understand (giving more than required) and the marks will take care of itself.
