I'm having some difficulty understanding the process that they use there. Can some one please explain why they take the x₀ away? and how did they make -(x₀²-N)/2x₀ positive?

Simple algebra. They multiply the x₀ by 1 = 2x₀ / 2x₀, then simplify.

When you simplify it comes out "positive".
