I'm having some difficulty understanding the process that they use there. Can some one please explain why they take the x0 away? and how did they make -(x02-N)/2x0 positive?

Simple algebra. They multiply the x0 by 1 = 2x0 / 2x0, then simplify.

When you simplify it comes out "positive".
